St. Louis Pork Steaks - I get it now!
Thursday, April 9, 2009 at 11:10AM BBQ definately has its regional specialties (Texas brisket, Carolina pulled pork, Memphis ribs) but overall St. Louis seems to be a mixed bag without much of a BBQ personality of its own except for the pork steak. Pork steaks are a staple of many a backyard cookout in the St. Louis area. Unfortunatley most are cut thin, grilled to oblivion, then soaked in a pan of sticky sweet BBQ sauce. I just didn't get it until I threw a couple on the smoker. Since then I've discovered that dirt cheap pork steaks can make a mighty fine BBQ on demmand without the fuss.
The best part is that you can decide you want BBQ mid-day and be eating great 'cue by dinner time!
Try a couple thick sliced center cut pork steaks (about an 1 1/4" works great) slathered in olive oil, mustard, and dry rub (I simply mix brown sugar, kosher salt, garlic and onion powder with paprika and red pepper to taste). Put them on your smoker with some apple wood chips at 225-250°F for about three hours. Yeah these cuts are fatty, but that fat makes the pork damn tasty as it renders down. This is darn near instant gratification compared to smoking a whole pork butt or sholder.
My kids even say they taste just like ribs!

btw, I feel guilty for drinking a weak american light beer while reading your blog, ha ha. I need to make sure I'm drinking real beer the next time!
